Back by popular demand, the babes of the Bulessa Washing station, managed by Tizita Bizuneh bring you these badass beans, while the gang at GWGC bring you the brewing recipe. Brewed up on V60, we’ve most enjoyed Tizita as a light-bodied, lemony lady that reminds us of apricot and caramel with a super lovely, buttery mouthfeel. See recipe below.

 

About Tizita...

In Ethiopia it is incredibly rare for women to be in management positions of washing stations or to be running coffee operations full stop. Well, welcome to the stage, Tizita Bizuneh!  Tizita manages the Bulessa Washing Station in Sidama which is entirely run by women, with 12 permanent washing station workers that ensure a smooth operation all year round and up to 70 additional workers once the coffee is harvested. Tizita started this project with the focus on educating women farmers, aiming to empower Ethiopian women working in coffee from production to station management. The world needs a lot more Tizitas!

V60 Recipe...

24g medium/coarse coffee in
346g water out

Step-by-Step
1.
Pre-wet the filter and pre-heat the V60, pour the 24g of coffee in.
2. Tap either side of the V60 to flatten the coffee bed.
3. For the bloom, pour 58g in and wait for it to completely drain.
4. For the second pour, pour 72g in and wait for it to completely drain (130g total).
5. For the third pour, pour 72g in and wait for it to completely drain. (202g total)
For the 4th pour, pour an additional 72g and wait for it to completely drain (274g total).
6. For the 5th and final pour, pour another 72g of water and wait for it to completely drain (346g total).
