Women-Owned. Every. Step. Of. The. Way.

This lot comes from Fazenda Lavrinha, in the heart of Cerrado Mineiro, Brazil, produced by Beatriz Aparecida de Souza Guimarães and her family, the fifth generation of the A. Guimarães farming legacy. Beatriz is at the centre of the business as President and Co‑Founder.

We have roasted this lot to a light-medium profile to perfectly balance its natural sweetness with the vibrant complexity from the anaerobic fermentation process.  Expect a bright, tropical cup with notes of pink lemonade and pineapple, rounded off with a creamy, macadamia finish.

Process
Most coffee is fermented in open-air tanks, but "Anaerobic" (which simply means "without oxygen") takes a more intimate approach. After harvest, we place the coffee cherries into completely sealed, stainless steel tanks. By removing the oxygen, we create a controlled, pressurized environment that allows the beans to soak in their own natural sugars and juices for an extended period. The Result in Your Cup It the boundaries of what coffee can taste like, resulting in a profile that is incredibly vibrant, complex, and often surprisingly fruity.
